Most importantly, I got a wireless thermometer. It makes all the difference in the world- takes out the guesswork. When it says a rack of lamb is 145 internal, or a brisket is 185, you can be sure it's spot on.

I did look at the links - and that would work, sure, but I agree with Bill. You can get almost all of that payoff for quite a bit less work.

My trick is to get the thickest chops I can find and use my barbecue thermometer to pull them off [more]
