Seasoned and grilled steak or chicken strips in a baggie make for quick protein. Protein shakes are another option.

We love the Kerrygold cheddar...expensive, but worth it.

Queso Fresco - slice a piece off (dental floss works great for this) and fry in a non stick pan until browned on each side. Serve plain or with a meat sauce or marinara. [more]

My husband prefers to use a combo of chopped up tri-tip roast and ground beef in his chili. But the sale was on ground beef, so that is what we had (all my tri-tips were frozen solid and we did not want to wait).

Homemade Chili

It's what's for dinner tonight.

My husband is trying this without a flour thickener to cut the carb count. He reserves the right to thicken it if he is unhappy with the consistency. He also increased the ratio of meat in relation to beans. [more]
