I stopped using water years ago and use sand today. Steady temp and easier cleanup when the bowl is also covered in foil. However, it does take time for the bowl full of sand to heat up, so...

I've seen these Diablo coals for sale lately. Apparently they pile a bunch of wood (mesquite, I think) into a pit (imu) and "cook" it a while. Then extinguish, bag it up, and you got natural charcoal.
