That works pretty well on a grill where the temp gets very hot, but a smoker rarely gets over 225-300 degrees F, which I don't feel is hot enough to clean burnt-on food and sauces from cooking grates.

One thing I noticed with my grill is that after some time the build-up actually peels off by itself. First time I saw it I thought it was the enamel, but it wasn't. It just flaked right off.

What is this cleaning thing of which you speak?

For me, that's mostly a matter of wire brushing the grates, water bowl and smoker body and spray washing in a DIY car wash - maybe using a degreaser on the grates and coating them with [more]

I'm thinking I should probably plan to clean the insides of the smoker soon. It doesn't have that shiny black enamel look anymore. Dull browns and blacks, with streaks of orange now.
