Someone gave us a barefoot Contessa cookbook several years ago. We haven't made any of the recipes yet, because we can't find a lot of the ingredients she uses.

I'll second Bob's cautionary note on aging.
If Chez doesn't do dry-aging, I won't, either. I have wet-aged beef tenderloin and beef strip loin before, with pretty good results. My microbiology background makes me leery of dry-aging beef myself.

Last time I tried Minion I didn't like it. It got very hot (expected) and was hard to control. The smoke seemed to be done in an hour and I had to add more pieces.
