I'm wondering if the thermometer on your WSM is defective, 1PG.
Fat cuts of pork (Boston butt, spareribs) shouldn't dry out that fast at (or around) 225.

If the temp goes above 250 with the bottom vents closed or mostly closed, I add more water to the bowl using a longneck beer bottle.
I start with a gallon of warm water in the bowl, and usually only need to add a little more than a quart after 8 [more]

Late night typing error!
I get the temp just above 225! with the bottom vents wide open, then close then until the temp starts to drop, then open them 1/4 way.
I use regular Kingsford briquettes, btw.

Chicken and salmon don't need to be smoked very long, and baby back ribs don't need to be cooked as long as spareribs.
I agree with Bob about not checking too often.

I've done leg of lamb a couple of times.
It needs to be taken off the smoker when it hits 145 or 150--it is tender when it hits a safe temp.
