In those cases, I always google "substitute for________" (whatever I'm missing) and see if there is a consensus among cooks on the Internet about an acceptable substitute.

I wish I had culinary instincts like that. I'm a decent cook once I know a method for preparing something, but I don't always improvise well.

Or you could use 2 layers of foil, and have zero pans to clean! ;-).
I do think the BBQ caddy looks cool, but there's no room in my kitchen cabinets for more stuff.

I didn't expect there would be so much variation between the top and the middle. I guess it has been good for me that I switch out the positions of the meat about halfway through a long cook.

Untrimmed, and I'm pretty picky about the racks I buy-- they have to be really meaty, generally at or above 4 lbs.
I don't foil or do the 3-2-1 method- I just leave them coiled in the smoker for 8-9 hrs.

I'm definitely not a guru, but I do like to smoke a pork butt for 12-13 hrs, and untrimmed spareribs for 8-9 hrs.
The result is nothing like jerky. (Unless you get those awful Danish ribs that come in a box. I can't imagine how pitiful the lives [more]

I got a ThermaPen (orange, of course) this summer when they had an "open box" 25% off sale. It's pretty amazing. I've heard the ThermaPops are very good, also.

I'm wondering if the thermometer on your WSM is defective, 1PG.
Fat cuts of pork (Boston butt, spareribs) shouldn't dry out that fast at (or around) 225.
